Most people associate Juniper Berries as being the principal flavoring in gin. Juniper has been used In porters, stouts and doppelbocks for centuries as well. Use 1/2 - 1 ounce in the boil. The flavor is very compatible with rye beer, and blends well with the citrus notes of ginger and orange peel, as well as licorice root and coriander. Crush berries with mortar and pestle before using, or place in thick plastic bag and crush with a mallet. The berries are also delicious in sauces and marinades for game dishes.
